A traditional egg salad recipe transformed into paleo perfection.
Hey there my paleo (and non paleo) people! Isn’t it crazy how “diets” come and go? I wouldn’t really categorize paleo as a diet, although I know for some people it is.
I have never gone paleo, and to be frank, I’m not sure I ever could. I love grains. I love greek yogurt. I love cheese and just about everything else it eliminates. You’d think being gluten free would make it easier, but no way!
I have crackers all the time, and don’t even get me started on rice or quinoa or POPCORN! Those foods are just never things I wanted to give up. Not to mention dairy.
I understand the health benefits (no additives, preservatives, or chemicals and all anti-inflammatory foods), but I already feel restricted enough with being gluten free, no need to add more restrictions!
My mom is on the paleo diet right now and she loves it! She said she hasn’t lost any weight, but she feels a lot better, which ultimately is the most important. Less aches and pains, more energy, better sleep. It’s crazy how food can do that.
One of the neatest things I’ve learned since becoming more health conscious is the importance of listening to your body. I know that may seem silly, but it’s true. You’d be surprised of how many people have no idea what their bodies are telling them.
Me for example, when I eat sugary or greasy foods, I immediately don’t feel good. Why? My body isn’t used to it. It’s another reason why I don’t drink often. Not because of the hangover, but my stomach can’t take it.
Listening to your body is important, and if there’s anything you take away from this blog post, it’s LISTEN TO YOUR BODY. (It’s the reason I knew I had celiacs.)
So on to the recipe! I love eggs. Hard boiled, scrambled, over easy, poached. I’ve also really like egg salad. The only problem is, is that once you’ve decided you want it, it takes a while to make. Boil the eggs – 7 mins, let eggs cool – 30 mins, peel eggs – 2 mins, chop eggs – 1 min. You get the picture. When I’m hungry, I want to eat. But if you meal prep hard boiled eggs, the first half is done! 😏
This recipe is simple and tastes delicioso 😋! I’m obsessed. No mayo involved and only 3 ingredients! It couldn’t get any easier than that.
- • ½ avocado
- • 6 hard boiled eggs
- • ½ teaspoon celery salt
- • Optional: mayo, red pepper flakes, green onion
- Hard boil 6 eggs on the stove for about 7 minutes.
- Take eggs off stove and immediately run them under cold water.
- Place eggs in fridge, let chill for 30 minutes (if you're in a rush, you can place them in freezer for 5 minutes, just don't forget about them :))
- Peel eggs and ½ an avocado, place in medium-sized bowl.
- Chop eggs with fork or potato masher and stir in avocado.
- Add ½ teaspoon celery salt, and optional ingredients (1 tablespoon olive oil mayo, ¼ teaspoon red pepper flakes, 1 tablespoon chopped green onion)
- Serve plain or on toast, enjoy!
