Your classic BLT lightened up, wrapped in greens and oh so delicious!
Hi there friends π If you haven’t tried collard wraps yet, nowβs your chance! It’s the best thing since sliced white bread. Literally. π Low-carb. Mild taste. And a little crunch. ππΌ
This BLT collard wrap is a light, savory and versatile alternative to the classic BLT sandwich. It’s packed with protein making it a great lunch or dinner option with lots of flava flav!
I’m pushing all my last minute summer recipes on you all. There’s just something about fresh food that tastes so good. And bacon. Bacon tastes pretty damn good tooΒ π I’m already dreading the days of heavy casseroles, but we aren’t going to go there. I’m living up every last minute of summer as I possibly can!
I’ve been doing a lot of lettuce wraps this summer, either with collard greens or romaine. Both work great! Romaine is a bit tasteless (more watery) and harder to stuff full with all the goods. Collard is a bit more malleable (meaning it holds more foodΒ π), just the way I like it!

BLTs are a Goetz summer staple. There’s nothing better than a traditional open faced blt with corn on the cob. Amiright?! Last year I was experimenting and came up with a BLT stuffed chicken breast which was what sparked the idea for this recipe.
I’m usually more of a TBALT kind of a girlβ¦ turkey bacon, avocado, lettuce and tomato, but I switched it up for this recipe because turkey bacon just had no game on the real thing. I actually shot this recipe with turkey bacon first and then my mom, who’s on a Keto diet, used real bacon on hers and it tasted better, so I decided to re-shoot and retool the recipe. Guilty as charged.

Here are some of my tips:
- Grab a napkin (or 5), this thing gets messy!
- Lots of dressing options: mayo (or vegan mayo), hummus, bolthouse ranch, or tessemae’s organic creamy ranch
- You can substitute lunch meat for shredded chicken breast or go completely without
- Sides that pair well: Lunch – cottage cheese, veggies and hummus, peaches, quinoa or veggie stix / Dinner –Β corn on the cob, roasted Brussels sprouts, grilled veggies, quinoa
- Cut the avocado and tomato right before eating /serving
Ready to dive in?
- β’ 2 collard wraps
- β’ 2 chicken breast, skinless, boneless, shredded
- β’ 6-8 slices of bacon/turkey bacon (more if desired)
- β’ 1 tomato, sliced
- β’ 1 avocado, sliced
- β’ 2 tablespoons ranch/mayo/hummus
Optional: green onion
- Preheat oven to 350 degrees and line baking sheet with bacon/turkey bacon.
- Once pre-heated, place bacon in oven and let cook for 20 - 25 minutes, based on desired crispiness.
- Prepare the chicken breast (shred if not already), slice 1 tomato and 1 avocado.
- Once bacon is cooked, assemble two collard wraps - each collard wrap has 1 shredded chicken breast, 3-4 slices of bacon, 2 slices of tomato, ¼ - ½ sliced avocado and 1 tablespoon of ranch/mayo/hummus.
- Enjoy!
