These blueberry energy balls are easy-to-make and will likely become your go-to afternoon snack. They are gluten-free, paleo-friendly, and best yet low-carb, so you bet they are going to be better (and cheaper) than any store bought snack. All you need is a food processor and a few minutes to whip up a batch of these amazingly delicious protein balls.

I’ve been on a quest for different, healthy snack options lately and energy balls are always at the top of my list. If you haven’t tried these ones yet, you should:
- Cookie Dough Energy Balls
- Mint Chocolate Chip Energy Balls
- Chocolate Cranberry Protein Energy Balls (Nick’s fav)
The only problem (for me), is that my digestive system does not like nuts – peanuts, almonds, cashews, pecans, you name it. My stomach tolerates them every now and again, or if they’re ground up, like peanut butter, but I just never know when it’s going to upset my stomach and when I get a free pass. 🤷🏻‍♀️
Last month, for 2 weeks straight I was so bloated and uncomfortable. I thought I was getting inadvertently glutened by something, but I couldn’t figure it out. Then I realized that I had switched my normal granola for Paleonola which is mostly nut based. (and very, very yummy!)
Within 3 days of not eating it I felt a lot better. My stomach was really sensitive for a couple weeks after, so I tried to avoid nuts at all cost, but like I said, it’s in everything – almond milk, RX bars, granola, energy balls, Perfect bars, almond flour, you get the idea. It was tough.
So, as much as I love these little Blueberry Energy Balls, I have to restrain myself from eating the entire batch in a week, which actually isn’t that hard in my house because Nick pretty much devours the bowl in 3 days. 🙄
Does anyone else struggle with this? Just me?
Blueberry Energy Ball Ingredients
- Medjool Dates
- Cashews
- Cashew butter
- Dried Blueberries
- Vanilla Extract
Just 5 simple ingredients is all you need.
I’ve got a lot of questions about which cashew butter I use. I usually buy Aldi’s Simply Nature brand, but if it’s not in stock, my go-to is Justin’s.
I call this paleo-friendly, but the dried blueberries likely have added sugar, so technically it’s not. I haven’t been able to find a brand that dried blueberries without sugar, but if you know of one, please let me know!
How to Make Energy Balls
I love this protein ball recipe because it’s so easy. You simply pit the dates and then throw all the ingredients into the food processor and blend on low/medium speed for 1 – 2 minutes until everything is combined.
Then using a cookie scoop roll the energy balls and then place them in an airtight container and store them in the fridge or freezer.
Easy clean up and you’re done!
We love to have them for snack during the week and also dessert [smirk face emoji] They taste just like a blueberry muffin!
If blueberries aren’t your jam, trying swapping them out for dried cranberries or cherries. 🍒 Either way, you’re going to love them!
- • 8 medjool dates
- • 1 cup cashews
- • 1 - 2 tablespoons cashew butter
- • ½ cup dried blueberries
- • 1 tsp vanilla extract
- Pit the dates, then place all ingredients into the food processor.
- Blend on low/medium speed for 1 - 2 minutes until everything is combined.
- Using a cookie scoop, roll into balls and place in airtight container and store in the fridge or freezer. Enjoy!
