Growing up, we lived off of Blueberry Muffins. Pillsbury to be exact. They were my favvvvv. 😋 So of course, I had create my own healthier version – have you tried these Blueberry Banana Oat Muffins? Ugh, they are to die for.
Then I decided to make them into an overnight oat recipe – and ta da! Out hatched this bad boy.
We’re talking creamy, cold oats that taste just like a blueberry muffin. It doesn’t get much better than that!
Plus the toppings. Mmmm. You can add whatever your little heart desires. 💙 There are so many options – pecans, honey, granola, extra bloobs (blueberries), a drizzle of almond/peanut butter. You name it, it can go on top!
Here’s What You Need:
- Gluten free rolled oats (used rolled, not steel-cut)
- Almond milk
- Vanilla greek yogurt
- Maple syrup
- Cinnamon
- Vanilla extract
- Frozen Blueberries
It’s so simple. Place all of the ingredients into a mason jar or a closable container and stir until combined. Place it into the fridge for at least 3 hours (or overnight, hence the name). Take it out, add your toppings and chow down!
We’ve been making up a batch during meal prep and then grabbing one on the way out the door. It’s so nice to not think about what to have for breakfast nor spend time making it in the morning!
Plus, oatmeal is really fibrous so it keeps you full all morning long. No snack required to hold you over to lunch time! So what are you waiting for? Go whip up a couple and have the best breakfast waiting for you in the morning ☀️
- • ½ cup gluten free rolled oats

- • ½ cup vanilla greek yogurt
- • 1 tablespoon pure maple syrup
- • ¼ teaspoon cinnamon
- • 1 teaspoon vanilla extract
- • ½ cup blueberries, frozen
- Toppings: extra blueberries, pecans, honey, granola, almond butter
- Place all ingredients into mason jar or closable container and stir until combined.
- Place in fridge for at least 3 hours (or overnight, hence the name).
- Take out of fridge, add toppings and enjoy!
