Hello my peeps! Well it’s been a crazy couple of weeks. Between painting the house, wedding venue shopping, packing and actually moving into our new home, I have been lacking on updating the blog and social media. Soo these tacos. I’m obsessed. When I shot the recipe, my mom and I had them for lunch and no joke, we kept “yumming” after every bite. (I’m not even exaggerating.)
The key to these tacos are the tortillas. I’ve said this before but Siete foods coconut cassava flour tortilla. You have to try them and yes you’ll get addicted. They are AHHHMAZING cooked on the stove. (and not so amazing cold lol.) If you can find me a good cold gluten free wrap, let me know. But that’s besides the point. These tortilla are just plain delicious.
The other two ingredients that make the recipe are Al Frescos breakfast chicken sausage and goat cheese! Al Frescos’ products are awesome. They have minimal ingredients and you can actually read the labels, I’m talking meat, salt, spices. That’s it! Each sausage link is 50 calories and packed with 5g of protein. Wahoo! 🎉 Plus they are made with lean, skinless chicken meat, contain 70% less fat than pork sausage and 40% less sodium – now that’s what you have to watch out for. (200mg in one of these bad boys.) All in all, they are pretty darn good for you and taste amazing! Win win 😁
And goat cheese. Oh man, if you haven’t tried it, start small. It’s a stronger cheese, so if you don’t like it you don’t want it all over your breakfast taco. I LOVE it! Goat cheese has fewer calories compared to cow cheese (mozzarella, brie, swiss, cheddar), it’s high in vitamins and minerals – like vitamin A, B, calcium, iron, magnesium and potassium and it has less lactose – making it easier to digest! However, if you don’t like goat cheese, feel free to substitute feta, mozzarella or cheddar cheese.
This recipe uses all healthy ingredients and it’s super simple to make. You can whip these bad boys up in less than 10 minutes.
All you have to do is grab a large skillet and heat the tortillas until they are browned on each side, about 5 minutes total. Then scramble the eggs and fry the chicken sausage all together in the same skillet. While the eggs and chicken sausage cook, you’ll prep the toppings – green onion, avocado, tomatoes/salsa, goat cheese, hummus, sriracha, whatever you heart desires!
Once the eggs are cooked, throw everything on top of the tortilla and chow down!
I promise you will not be disappointed! Cue the yummmms 😋
- • 2 eggs
- • 2 al frescos breakfast chicken sausage
- • 2 Siete foods coconut casava tortillas
- • 1 oz goat cheese
- • 2 teaspoons hummus
- • 2 tablespoons green onion
- • ⅛ avocado (1 slice on each taco)
Optional: sriracha, tomatoes
- Heat large skillet on stove and brown 2 tortillas on each side, ~5 minutes total.
- While tortillas cook, cut 2 breakfast chicken sausage into ½ inch slices. Once tortillas are cooked, set aside.
- Scramble 2 eggs and 2 sliced breakfast chicken sausage in same skillet.
- While the eggs and chicken sausage cook, prep the toppings - green onion, avocado, tomatoes/salsa, goat cheese, hummus, sriracha, whatever you heart desires!
- Once eggs and scrambled and chicken sausage cooked, throw everything on top of the tortillas. Enjoy!
