Hello my party people! I hope you’re hanging in there. This quarantine life is tough, but I think there’s light at the end of the tunnel. In fact, I feel like people are just starting to call it quits, and I totally get it. We got together with my parents the other weekend, and it almost felt like we were breaking rules.
And just this past weekend, we celebrated Mother’s Day with both sides of the family.
It felt so good to socialize with someone other than my husband and dog. That sounds so silly, but it’s so true! It’s weird because this new way of life has become routine. As much as I can’t wait to go back “normal”, I feel like I’m going to miss working from home or spending as much time with Nick as we have. I wonder if I’ll want to go back to the gym every day or if I’ll start incorporating workouts from home more often . Who knows?!
One thing is for sure, I will be packing up a vehicle and making a long road trip out to New Jersey to meet my new baby nephew. I honestly think that’s been the hardest part for me. Not being able to meet my sweet Salvatore. I’m a first time auntie and it’s killed me to wait this long. Sadly, I imagine the time we get out there he’ll be 3 to 4 months old already. Thank goodness for FaceTime.
Anyway, enough with that. Let’s get to these balls!!
I think this is the 5th energy ball recipe on the blog! 5th! That’s nuts. I have an energy ball for snack (or breakfast) almost daily. They are the perfect pre-workout snack. Light, but filling and they are packed with good-for-you ingredients and still taste so yummy!
Here’s what you’ll need.
Cake Batter Energy Ball Ingredients
- gluten free oat flour
- cashew butter
- pure maple syrup
- vanilla extract
- vanilla protein
- sprinkles
Don’t think you have to buy gluten free oat flour (does such a thing even exist? I don’t know.), you can simply blend oats in a food processor or blender. And as for cashew butter, I usually just buy Aldi’s Simply Nature brand, but lately it’s been hit or miss if they have it in stock, so if not, then I usually get Justin’s.
If you don’t have vanilla protein powder you can use unflavored collagen, but the vanilla does add more of the “cake batter” flavor. Right now, I’m using Power Crunch Whey protein.
How to Make Energy Balls
- First things first, blend the gluten-free oats in a food processor or blender for 1 – 2 minutes until flour-like.
- Add in ½ cup cashew butter, ¼ cup pure maple syrup, 1 teaspoon vanilla extract, 2 scoops vanilla protein powder, ¼ teaspoon sea salt and 1-2 tablespoon sprinkles.
- Turn the food processor on low speed and blend for 30 seconds. If needed, push the “batter” down with a spatula and blend again until ingredients are combined.
- Using a 1” cookie scoop, fill the spoon ¾ full and gather the dough (you can use a smaller cookie scoop if smaller size is desired.)
- Roll the dough in your hands to form a ball and then rotate the energy ball in ¼ cup of sprinkles.
- Place the prepared balls in an airtight bowl and store the fridge. Let chill for 2 – 3 hours, then enjoy! (You can also place in freezer for 10 – 15 minutes to speed up the chilling process)
Be careful, these Cake Batter Energy Balls will go quick! I swear every time I turned around Nick had one in his hand.
