Hi all! Wow it’s feels like it’s been foreverrr since my last post (even though it’s only been two weeks) I cannot tell you how crazy it’s been around here. We got back from our trip to North Carolina and I immediately got stricken by the flu. I had not been that sick in years and what terrible timing, as I was trying to turn around and get ready for our trip to New Jersey for my brother’s wedding.
Luckily, I got better by day 4 (thank god 🙌🏼) and could enjoy my brother’s wedding. It was an absolutely beautiful day and I’m just relishing in all details.
Now it’s back to reality and finalizing everything for our wedding! Eeeekk we are under 20 days and I cannot believe it.
Now that I’m back up and running, I’m ready to get into my regular routine – including my meals and workouts. Plates filled with a protein, carb and veggie. And back to my regular gym.
Which leads me to this wonderful big hearty salad bowl. It’s everyone’s favorite… Caesar salad, but with a healthier twist and it’s packed with protein!
I’m not going to lie I’m not a huge salad person, but because I have Celiacs, sometimes it’s my only choice. Especially when we go out to eat. I was actually at a backyard BBQ when my friend made a variation of this salad and I knew it would be a hit on the blog!
What you’ll need
Romaine
Grilled Chicken
Grated Parmesan Cheese
The bolthouse dressing cuts the typical Caesar salad calories wayyy down and the Banza Noodles replace the typical carb-y croutons while still giving you the texture you love! Not to mention grilled chicken and crisp romaine? Mmm mmm 😋
Like all my recipes this one’s easy peasy. You’ll grill the chicken and cook the noodles at the same time, which takes around 20 minutes total. You can also do this beforehand so the chicken isn’t warm when served. Then just place everything into a bowl and chow down!
If you’re making this salad for meal prep, leave the dressing off until you eat it, otherwise it’ll wilt the romaine. You could also add artichokes or olives, really anything your heart desires!
- • 1 bag romaine lettuce (or 4 cups)
- • ¼ cup - ⅓ cup Bolthouse caesar dressing
- • 2 ½ cups Banza noodles
- • 6 oz grilled chicken
- • ⅓ cup grated parmesan cheese
- Bring a pot of water to a boil and cook noodles for ~10 minutes, or until soft (follow instructions on box)
- While the pasta cooks, grill the chicken (~20 minutes or until center is not pink).
- Once the pasta and chicken are cooked, toss 1 bag of romaine lettuce into a large bowl, and add 2½ cups cooked Banza noodles, 6 oz sliced grilled chicken and ⅓ cup grated parmesan cheese.
- Toss in ¼ cup - ⅓ cup Bolthouse Caesar dressing and enjoy!
