Okay, let’s get on to why you’re really here. These fabulous molten lava cakes!
I actually had never had a lava cake before this year. One of my favorite bloggers, Pinch of Yum, posted an insta stories tutorial right before valentines day, so naturally I had to try it and we fell in love 😍
When I went to go find the recipe it was lost in the sea of 10,000 photos on my phone, so I had to recreate it! 🤷🏻♀️
Here’s what you’ll need:
Lava Cake Ingredients:
- coconut oil
- chocolate chips (I prefer dark and Enjoy Life brand)
- eggs
- vanilla extract
- powdered sugar
- gluten free flour
- Toppings like Halo Top ice cream, berries, coconut whip cream, etc.
Not only are these little bowls of goodness gluten free, but they are also dairy free! Double whammy.
How to Make Lava Cakes
There are 5 easy steps.
- Preheat the oven to 450 degrees.
- Melt the coconut oil and the chocolate in a microwave safe bowl. Heat in intervals of 30-seconds until melted (should only take 45 seconds total). Stir to combine.
- Next whisk the eggs and egg whites together in a small bowl and add the vanilla extract. Set aside.
- In a larger bowl, mix together the powdered sugar, gluten free flour and salt. Then the chocolate and eggs to the flour/sugar mixture. Whisk well.
- Coat the ramekins well with cooking spray and then add half the batter to one and half to the other. Bake for 12 minutes (the tops should be a little jiggly), then let sit for 5 – 10 minutes before enjoying!
What to serve with the cakes?
My all time favorite is Halo Top ice cream (just plain vanilla for me 🙋🏻♀️), but we’ve also had it with a sprinkle of powdered sugar and berries, which is also to die for! And last but not least, a little drizzle of melty peanut butter. Mmmm 😋

- • ¼ cup coconut oil, melted
- • ½ cup chocolate chips (dark or milk)
- • 2 eggs
- • 1 egg yolk
- • ½ teaspoon vanilla extract
- • ⅓ cup powdered sugar
- • ¼ cup gluten free flour
- • pinch of salt
- Toppings: Halo Top ice cream, berries, powdered sugar, coconut whip cream
- Preheat oven to 450°F.
- Melt ¼ cup coconut oil and ½ cup chocolate chips in microwave-safe bowl. Heat in intervals of 30-seconds until melted (should only take 45 seconds total). Stir to combine.
- Whisk 2 eggs and 1 egg white together in a small bowl and add ½ teaspoon vanilla extract. Set aside.
- In a larger bowl, mix together ⅓ cup powdered sugar, ¼ cup gluten free flour and a pinch of salt. Then add the melted chocolate and eggs to the mixture. Whisk well until smooth.
- Coat two 6 oz ramekins well with cooking spray and then add half the batter to each. Place ramekins on a baking sheet and place in oven.
- Bake for 12 minutes (the tops should be a little jiggly and soft).
- Remove cakes from oven and let cool for 5 - 10 minutes. (Use the edge of a knife to gently loosen the cakes from the sides and flip ramekin over onto a plate/bowl). Top with your favorite ice cream and enjoy!
