This classic chicken salad recipe is a staple. It’s low-carb, protein-packed and super easy, making it the perfect lunch. You can eat it plain, load it on crackers, serve it in lettuce wraps or on a sandwich. Just whip up a big batch at the beginning of the week (for meal prep) and you got yourself a healthy meal that’s versatile and delish!

It’s been a crazy week so far. I’m super behind on the blog (whoops), but I took some much needed time off last week. You have to do that every once and while. Now I’m playing catch up and trying to crank out a bunch of new stuff for you guys. In fact, I just worked on May’s calendar and I’m really excited about the workouts and recipes coming your way.
I did a little Instagram stories poll last week asking what you guys wanted to see more of and the winners were: dinner recipes, snack ideas (I was surprised by this one because it beat out health desserts), more recipes shared on insta vs. the blog (I can do that, less time for me anyway!) and a pretty even split between HIIT workouts and Weights. All good stuff. I love knowing what you like/want. It makes my life a lot easier!
So I’m going against everything you guys want and am sharing a lunch recipe, on the blog! 😜
This chicken salad is a go-to in my house. We literally have it once a week; it’s my favorite. It’s so simple to whip up and you likely already have all the ingredients on hand (besides dill 🙂 that you might have to buy).
The recipe has gone through a bunch of different iterations, but for me, I like to keep it easy and use the least amount of ingredients as possible. If a recipe has a boat load of ingredients that I don’t already have, chances are I’m not making it.
Here’s what you need:
Shredded chicken
Mayo
Plain greek yogurt
Green onions
Dill
Red grapes
6 ingredients and 10 minutes (plus the whole cooking the chicken part)
I use an instant pot to cook the chicken, which works pretty slick. It takes about 10 – 15 minutes, plus the heat up, which takes another 15 minutes, I’m not sure why no one ever talks about that part??
Then comes time to shred.
Who agrees shredding chicken is a total biotch. 🙋🏽♀️ Yeah, me too. That was until I discovered the easiest and best way to do it.
I cut my cooked chicken breast into 3 big chunks, throw it in a food processor (I have the Ninja Professional Kitchen) and it’s done in less than 20 seconds. No achy hands, no mess, just press a button and viola!
If you don’t have a food processor (you should get one!), but if that’s not an option, you can also use a hand mixer.
I shred a bunch of chicken at the beginning of the week, use what I need for meal prep and then throw the rest in the freezer for next week. It makes my life easy!
Once the chicken is ready to go, you just add in the other ingredients, stir it up and chow down! My favorite way to eat it is with crackers, but it’s also really good on lettuce wraps, bread or just plain!
It’s the perfect healthy meal prep recipe and I promise it won’t disappoint!
- • 8 - 10 oz shredded cooked chicken (~2 chicken breasts)
- • ¼ cup olive oil mayo
- • ¼ cup plain greek yogurt
- • ¼ cup green onions, diced
- • 2 - 3 tablespoons dill, diced
- • ½ cup red grapes, sliced
- • 1/2 teaspoon salt
- • 1/2 teaspoon pepper
- Shred cooked chicken in food processor or with hand mixer and place in large bowl.
- Add ¼ cup olive oil mayo, ¼ cup plain greek yogurt, ¼ cup diced green onions, 2 - 3 tablespoons diced dill, ½ cup sliced red grapes, ½ teaspoon salt and ½ teaspoon pepper to shredded chicken.
- Stir until combined.
- Serve with crackers, on lettuce wraps, in a sandwich or eat it plan.
