Hello peeps! Just another wonderful recipe coming your way today. Ya’ll said you wanted more healthy snack ideas, so here I am fulfilling your every desire ✨ And to be honest, I wish I would have come up with this one a while ago, because I’m obsessed.
Cookies are really my arch nemesis. I used to have this weird thing that if I was going to have a cookie and ruin my healthy eating for the day, then I thought I might as well just have the whole batch (…or at least 2 – 3). 🍪🍪🍪
Needless to say, we don’t have dessert in our house very often, and for good reason. 1. I’ll eat it every day until it’s gone. 2. Nicks sweet tooth is beyond explanation.
Luckily, now we have this recipe to satisfy our dessert cravings!
When your cookie craving is strong, take 5 minutes to whip up these bad boys! They’re flourless, refined-sugar free, egg-free AND still taste like cookie dough. The texture is on point 💯 and they’re simply delicious! Need I say more??
Here’s what you’ll need:
gluten free oats
cashew butter
pure maple syrup
pure vanilla extract
pink Himalayan sea salt
mini chocolate chips
The recipe is easy – you’ll put everything into a food processor, expect for the chocolate chips. Using the pulse function, you’ll mix the ingredients for 20 – 30 seconds (this helps break down the oatmeal a bit). Then you’ll put it on the dough function (if you have it) to finish combining all the ingredients. Then take out the blade and add in the chocolate chips, stirring everything until completely mixed. Using a spoon, you’ll scoop out a small amount and using your hands, roll into balls. Place them in a airtight container and store them in the fridge (or freezer).
The recipe will make 10 – 12 balls depending on size.
You can also add Flavorless Collagen to add a little protein, which would make for a great pre or post workout snack!

- • 1 cup gluten free oats
- • ⅓ cup cashew butter
- • ¼ cup pure maple syrup
- • 1 tsp pure vanilla extract
- • ¼ tsp pink himalayan sea salt
- • ⅓ cup mini chocolate chips
- Place all ingredients into food processor, except for mini chocolate chips.
- Using the pulse function, mix ingredients for 20 - 30 seconds.
- Then use dough function for 1 minute or until everything is combined. (You may need to use a spoon to push dough down if blades aren't catching it.)
- Once combined, take blade out and add in ⅓ cup mini chocolate chips, stirring everything until completely mixed.
- Using a spoon, scoop out small amount and using hands, roll into balls.
- Place in a airtight container and store in the fridge (or freezer).
