Hi friends! How’s it going? All good here. I can’t believe it’s the end of July already. Like whhhaa?! My Bachelorette party is in T-minus 8 days and I couldn’t be more excited 😬 I’ve been waiting for this weekend for what seems like forever and now it’s here. It’s going to be a great couple of days with my besties (and my parents and aunt and uncle!)
Despite it being almost August, I’m still in full summer mode. Still digging the salads and fresh fruits and veggies (I forget how much I miss that in the winter.)
Nick and I have been having this salad a lot lately. Surprisingly, Nick loves salads. He would rather have a salad than a sandwich any day of the week. I’m the opposite. Probably because I love carbs. 🤷🏻♀️ I need that crunchiness. Luckily for me (and you!) this salad has it all!
This recipe is really pretty simple. 8 ingredients and 10 minutes is all it takes.
Here’s what you’ll need:
- Spinach
- Apples (green and red)
- Dried cranberries
- Pecans
- Feta
- Olive oil
- Apple cider vinegar
- Brown sugar
- Optional: Chicken
You’ll first cut up the apples. I use 1 green and 1 red, but it really doesn’t matter. Then you’ll toss all the salad ingredients together (spinach, apples, dried cranberries, chopped pecans and feta into a bowl (or two if you’re meal prepping). Then you’ll get the dressing ready – in a small bowl (or two individual small containers), combine the olive oil, apple cider vinegar and brown sugar. Stir until everything is mixed together and then pour the dressing onto of the salad and chow down, baby!!
If I make this up for lunch, I’ll add chicken for some extra protein 💪🏼
But, we’ve also had it as a side dish! It pairs really well with white meat, like pork loin or chicken.

- Salad
- • 1 cup spinach
- • ¼ cup dried cranberries
- • ¼ cup light feta
- • ¼ cup diced pecans
- • ½ green apple, cubed
- • ½ red apple, cubed
- • Optional: 4 oz grilled chicken
- Dressing
- • 2 tablespoon olive oil
- • 3 tablespoons apple cider vinegar
- • 3 teaspoon brown sugar
- • Salt/Pepper
- Dice ½ a green and ½ red apple in ½ inch pieces.
- In a large bowl, combine all the salad ingredients together – 1 cup spinach, cubed ½ green apple, cubed ½ red apple, ¼ cup dried cranberries, ¼ cup chopped pecans and ¼ cup light feta. If meal prepping (split salad into two)
- In a small bowl combine 2 tablespoons olive oil, 3 tablespoons apple cider vinegar and 3 teaspoons brown sugar. If meal prepping, split dressing into two individual small containers
- Pour dressing over salad and mix together until salad is wet.
