There’s nothing better than a quick and easy breakfast, especially one you can prep on the weekend and enjoy all week long. This crockpot apple pie oatmeal is just that! It’s loaded with apples and spices and makes mornings simple and delicious!
All you need is 7 ingredients and a crockpot to make this festive and filling breakfast.
After writing that intro, I’m practically drooling over here. In fact a big pot of it is sitting in my fridge just waiting to be eaten.

Speaking of Christmas. T – a week and a half. EEEK! I can hardly wait. This is the first year I won’t be home Christmas Eve night or Christmas morning, which will be different, but I’m open to new traditions. I’m mostly excited to spend it with Nick. 🙂
Onto the oatmeal. If you’re an avid afitcado reader, you know I only eat oatmeal about once a week. I used to eat it almost everyday in college, but then like everything else, it started to get old. I look forward to my Wednesday morning oatmeal. It’s usually peanut butter and raspberries – I know it sounds like an odd mixture, but it’s like pb and j. 🙂
I love the warmth it brings. There’s just something about that first bite that hits the soul. I usually pair it with a mid morning protein shake to help balance the macros.
This apple pie oatmeal is thick and creamy with the perfect amount of spice. It’s so simple, it really couldn’t get any easier. Throw all the ingredients into the crockpot:
- Oatmeal
- Almond Milk
- Apple Juice (100% / Organic)
- Brown Sugar
- Apples
- Cinnamon
Stir and set on high for 2 -3 hours. You can make it on Sunday and then divide into containers, or just place the crockpot bowl into the fridge and self serve! Either way it reheats great! Toss a little milk on top before microwaving/reheating and you’re golden!
If you’re hosting or having company stay, this is the perfect recipe for Christmas morning! It’s festive and filling, especially if you don’t eat lunch/dinner until later.
Dust off that crockpot and get to cooking!
- • 1½ cups gluten free oatmeal (rolled oats)
- • ¼ cup brown sugar
- • 1½ cups almond milk
- • 1 cup 100% organic apple juice
- • 1 apple, diced into ½ inch pieces
- • 2 teaspoons vanilla
- • ¼ teaspoon cinnamon
- Toss all ingredients into the crockpot and set on high for 2 - 3 hours, stirring occasionally. Enjoy!
