The best, lightened-up chili that’s perfect for soup season!
We’re in the thick of winter and the only thing that sounds good is piping hot soup! This crockpot white chicken chili is just the thing you need for sub zero days. It’s easy, immune boosting and exploding with flavor!

Helllloo sexy ladies (and gents!) I’ve had this recipe on the docket for a while now (since last February to be exact!). It’s been my go-to soup for a couple of years and I’ve already made it 3 times this winter. It’s definitely one of Nick and I’s favorites!
In fact, soups have been a frequent dinner around here! Coming up with meal plans has been really tough lately. I’ve been craving warm comfort food (aka carbs) and salads just don’t sound that good (amiright?!), but I’ve been trying my best to incorporate more veggies.
I’ve made soup almost every Sunday night because it’s so simple. Throw the ingredients in a crockpot, set it on high and have leftovers the rest of the week!
(If you haven’t tried my sweet potato turkey chili, you should give it a shot!)
Things are getting back to normal after the holiday madness and to be honest, I love it. Routine is good for me. This past weekend, Nick and I had no plans and I was in bed both nights before 10p. I was completely exhausted from all the running around, it was nice to have a weekend to relax.
I got to catch up on my to-do list, including cleaning the keurig for the first time in forever, testing out the new instant pot and shooting a couple of recipes (which I haven’t done in a long time!)
Did anybody get an instant pot for Christmas? Who am I kidding, everyone did! After a few attempts, I finally feel like a pro! We have a lot of soup Sundays ahead of us, so there will definitely be be some instant pot recipes coming your way soon!

With only 5 ingredients, this soup is affordable, easy and delicious! (the best combo in my opinion :))
All you need is:
- Chicken Broth
- Shredded Chicken
- Great Northern Beans
- Salsa Verde
- Green Chilis
And lots of spices!!! (cumin, chili powder and oregano to be exact)
I literally throw everything in the crockpot and that’s it!
This recipe makes a ton, so you’ll have leftovers for dayyzz! Plus you can enjoy it guilt-free because it’s loaded with lean protein, good-for-you legumes and all the right spices to boost that immune system.
Oh and it’s completely gluten free, dairy free and can be made vegetarian by swapping vegetable broth for chicken broth and leaving out the chicken.
Leave it on low all day while your at work or crank it up and let it cook on high for 3 hours. Either way you’ll be enjoying one savory soup! Grab those bowls and big spoons because this one’s going to rock your world! 🌍
- • 8 cups chicken broth (low sodium, free range - if possible)
- • 4 cups shredded chicken
- • 2 (15 oz) cans great northern beans, drained and rinsed
- • 1 (7 oz) can mild green chilies
- • 1 (16oz oz) jar salsa verde
- • ½ tablespoon cumin
- • 1 teaspoon chili powder
- • ½ teaspoon oregano
- • 1 tablespoon garlic, minced
Toppings:- • plain greek yogurt
- • avocado
- • green onion
- • tortilla chips
- Plug in the crockpot and set on high or low.
- Pour all ingredients in crockpot, stir and let simmer for 3 hours on high or 5-6 hours on low.
