I would have never guessed time would have gone so quickly, yet here it is.
Summer is “over.”… for the kiddos at least, and everyone’s settling into their routines. I just started teaching at a different gym and I’m still getting used to my new “schedule.” For all you type-A’ers out there, you know how hard that is.
I can feel the change of seasons, but I’m not ready to let all the summer feels go just quite yet.
Anyywhooo, onto this deliciousness! This Easy Strawberry Crisp is out of this world! Needless to say, I’m obsessed.
I tested the recipe a few weeks ago and brought it to a friend’s BBQ to see what everyone thought and it was a hit! Don’t get me wrong, Nick is a good recipe tester, but it’s nice to get other people’s opinions once in a while too!
So you don’t have to take my word for it this time. 😏
It’s the perfect summertime sweet treat! Oh, and that drizzle, mmm mmm 😋
The best part? Clean ingredients.
What you’ll need:
Crisp:
- GF Rolled Oats
- Almond Flour
- Brown Sugar
- Cinnamon
- Ground Ginger
- Coconut Oil
Filling:
- Strawberries
- Lemon Juice
- Maple syrup
Glaze Drizzle:
- Lemon Juice
- Powdered Sugar
All gluten free, refined-sugar free and paleo-friendly ingredients!
How to make it:
Easy is the name of the game! Preheat your oven to 350 degrees and line a 8×8 inch pan with parchment paper. In a large bowl, combine all the “crisp” ingredients – gluten free rolled oats, almond flour, brown sugar, cinnamon and ground ginger, slowly adding in the melted coconut oil. Once combined, scoop out ½ cup and set aside. Using the rest, line the bottom of the pan with the crisp and press firmly together.
In another medium-sized bowl, add the filling ingredients – strawberries, lemon juice and maple syrup. Mix together and then pour on top of crisp in pan.
Sprinkle the rest of the oatmeal crisp, covering the top. Place in the oven and bake for 30 minutes.
While it’s baking – mix together the the powdered sugar and remaining lemon juice to create the drizzle.
Once baked, let cool for 10 – 15 minutes and then add the drizzle on top!
I guarantee you’re going to fall in love with this one! Top with a big scoop Halo Top Ice cream and enjoy every damn bite! 🍨
- Crisp:
- • 1 cup gluten free rolled oats
- • ¾ cup almond lour
- • ⅓ brown sugar
- • ¼ tsp cinnamon
- • ¼ tsp ginger
- • 6 tbsp melted coconut oil
- Filling:
- • 2 cups strawberries, sliced
- • 1 tbsp lemon juice
- • 1 tbsp maple syrup
- Glaze:
- • ½ cup powdered sugar
- • 1 tbsp lemon juice
- Preheat oven to 375 degrees and line a 8x8 inch pan with parchment paper and cooking spray.
- In large bowl, combine “crisp” ingredients - 1 cup gluten free rolled oats, ¾ cup almond flour, ⅓ cup brown sugar, ¼ teaspoon cinnamon and ¼ teaspoon ground ginger.
- Slowly add in 6 tablespoons melted coconut oil. Combine until wet.
- Scoop out ½ cup of crisp and set aside. Line bottom of pan with rest of crisp and press firmly together.
- In medium-sized bowl, add filling ingredients - 2 cups sliced strawberries, 1 tablespoon lemon juice and 1 tablespoon maple syrup. Mix together and pour on top of crisp in pan.
- Sprinkle rest of oatmeal crisp on top of strawberries, covering the top. Place in oven and bake for 30 minutes.
