The classic banana bread with a healthy twist!
Hey there! How we doing? I’m really excited for today’s post! 1. Because I finally had a reason to use my mini loaf pans and 2. because Banana Bread pretty much sums up my childhood visits to grandma’s house. Or rather my brother’s.
Growing up, my grandma would make a loaf of banana bread every time we came to visit. She’d make a loaf for the family and then another just for my brother. I swear he’d eat the whole thing in less than a day (or by the time we got home). I never really loved it. Probably because she topped it with walnuts and I wasn’t about that back then. Recently though, it’s been one of my favorites! Plus it’s a good way to use up all the frozen bananas taking up room in the freezer.
So today I thought I’d bring you the “healthier” version of my grandma’s recipe. 👵🏻 🍽
I made a few substitutions…
- Coconut Oil for Butter
- A mix of Pure Maple Syrup and Coconut Sugar for Regular Sugar
- Gluten Free Flour (Damata’s brand) for regular Flour
- Oh and I added in a few chocolate chips 🙃
It’s a piece of cake to make. Throw everything into the bowl. Mix, mix, mix. Toss in the chocolate chips and pop it in the oven. Viola!
The best part about Banana Bread is that you can save half and then put the other half in the freezer for later. Or you can eat the whole damn thing in a weekend, like I usually do. 😋
I’m a serial dessert eater. If it’s there, I try to eat it as fast as I can, so then it doesn’t tempt me all week. Bad way of thinking, I know.
Ready to make this sweet little treat?!
- • 2 cups gluten free flour
- • ¼ cup coconut sugar
- • ½ cup pure maple syrup
- • ½ cup coconut oil (liquid)
- • 1 cup mashed bananas
- • 2 eggs
- • 1 teaspoon baking soda
- • ½ teaspoon salt
- • ½ cup chocolate chips
Optional: ½ cup walnuts
- Preheat oven to 350 degrees, spray loaf pan or 4 mini loaf pans and place parchment paper on bottom of pan (makes it easier to get out)
- In a large bowl, mix together 2 cups gluten free flour, ¼ cup coconut sugar, ½ cup pure maple syrup, ½ cup coconut oil (liquid), 1 cup mashed bananas, 2 eggs, 1 teaspoon baking soda and ½ teaspoon salt.
- Pour in ⅓ cup chocolate chips stir until combined (leave the rest for sprinkling on top).
- Pour ingredients into loaf pan or split evenly between 4.
- Sprinkle remaining chocolate chips or walnuts on top or leave plain.
- Bake for 1 hour. Enjoy!
