Typically we’d go to church and then do brunch, but I’ll be in Dallas and my mom’s in Europe, so we’ll have to do a rain check.
Fortunately, I’ve got the best brunch staple for you today!
Whether you celebrate with breakfast, lunch or dinner – these Homemade Paleo Waffles can make an appearance anytime of the day!

These waffles are gluten-free, dairy-free, and paleo-friendly. Say wha?!
Homemade Paleo Waffle Ingredients
- almond flour
- coconut flour
- baking powder & soda
- eggs
- vanilla
- pure maple syrup
- coconut oil
- unsweetened vanilla almond milk
These ingredients are pantry staples, so you can whip up a batch any day of the week.
I tested this recipe many times, so I can let you in on a few tips:
- Make sure you use a superfine almond flour. Almond flour can taste grainy if you don’t get the right brand. My favorite is Bob’s Red Mill.
- Whipping the eggs is key – it makes the waffles a bit more crispy, which is what we all like!
- Don’t forget to spray the waffle maker every time you put more batter in.
- They freeze well, so you can pack them individually and heat them back up in the toaster.
How to Make Homemade Paleo Waffles
Plug in the waffle maker and let it get hot.
Then, mix the dry ingredients together – almond flour, coconut flour, baking powder, baking soda and salt. In a separate bowl, whip the eggs and then add pure vanilla extract, pure maple syrup, melted coconut oil and unsweetened vanilla almond milk.
Pour the wet ingredients in with the dry and with a hand mixer, combine the ingredients until the batter is smooth. Add cooking spray to the waffle iron and then using â…“ cup, scoop the batter into the iron and let it cook for about 5 minutes or until the outside is golden brown.
Repeat the process until all the batter is used (about 4 waffles, depending on what size you make them).
Serve them with fruit, maple syrup and/or peanut butter and you’re set!
Or store them in baggies and pop them in the freezer for any easy go-to breakfast during the week.
While these Homemade Paleo Waffles could easily be the main event, you could share the plate with these recipes as well:

- • ¼ cup coconut flour
- • 1 teaspoon baking powder
- • ½ teaspoon baking soda
- • pinch of salt
- • 2 eggs beaten
- • 1 teaspoon vanilla
- • 2 tablespoon pure maple syrup
- • 2 tablespoons coconut oil, melted
- • ½ cup unsweetened vanilla almond milk
- Plug in waffle maker and turn settings to hot.
- Mix the dry ingredients together – 1 cup almond flour, ¼ cup coconut flour, 1 teaspoon baking powder, ½ teaspoon baking soda and a pinch of salt.
- In a separate bowl, whip 2 eggs and then add 1 teaspoon pure vanilla extract, 2 tablespoons pure maple syrup, 2 tablespoons melted coconut oil and ½ cup unsweetened vanilla almond milk.
- Pour the wet ingredients in with the dry and with a hand mixer, combine the ingredients until the batter is smooth.
