These Mint Chocolate Chip Energy Balls are to die for! 😋 They’re made with healthier (and real) ingredients so you can enjoy a snack on the go without guilt. Plus they are nut, dairy and gluten free making them easy on the gut.
Grab your food processor and these 6 ingredients and you’ll be enjoying this decadent goodie in less than 15 minutes.

I have a very sensitive stomach, outside of being gluten free. And up until now I couldn’t put my finger on what was causing it. It would be random, but also really annoying. Last year, I noticed that every time I would eat almonds (which was my snack every Wednesday), I would get super bloated – like 4 months pregnant bloated. I did a little research and found that nuts are really hard on stomachs, so I tried soaking them, but let’s be honest, it was a pain.
Then within the past month or two I started to eat more peanut and almond butter and I noticed my sensitivities started showing up more often. One thing lead to another and I figured out that anything I ate with a nut, seed or legume was making my stomach upset. So I slowly started eliminating those foods – which by the way was wayyyyy more difficult than I ever imagined.
Granola, every protein bar known to mankind, chips, crackers, popcorn, hummus, the list goes on.
Long story short, it was impossible for me to cut everything out. Like come on, those are my main food groups! 😜 I cut back on the things that noticeably made me feel bad like almonds and peanut butter, but let myself cheat, knowing I might have some side effects.
Within a week I started to see the difference.
Which leads me into this recipe! Every energy ball I have ever made has upset my stomach. Why? They are all pretty much nut based or have flax/chia seed. So I was on a quest to create something I could eat that wouldn’t make my stomach hard as a rock. And maybe you are too?!
Que these MINT CHIP ENERGY BALLS!!!
A nut free, dairy free and gluten free snack that tastes like dessert!
Here’s what you need:
- Oatmeal
- Dates
- Cocoa
- Mint Extract
- Chocolate Protein Powder
- Optional: Rebbl, Chocolate Chips & Coconut Oil
This recipe couldn’t get any simpler. You’ll throw all the ingredients in the food processor and blend while slowly adding 4 tablespoons of Rebbl Cold Brew or water (which ever you have!). This helps moisten the the mixture and combine the ingredients. You can really use whatever liquid you want – Chocolate milk? Almond milk? Whatever! I like Rebbl Reishi Cold Brew because it’s packed with superfoods and good on the tummy.a Plus a little coffee in an energy ball never hurt 😉
Once the ingredients are combined, you’ll using a cookie scoop to roll the balls.
I dipped half in chocolate (throw ½ cup chocolate chips and 1 tablespoon coconut oil in a bowl and heat in 30 second intervals until melted). Cover half the ball in chocolate, place on a hard surface with parchment paper and put it in the freezer for 10 minutes to set.
I also covered some with cocoa. Warning: this is definitely more bitter than the ½ covered chocolate ones, but think it would be really tasty with coffee in the morning ☕️🍫
Or you could do both, cover with cacoa and dip in chocolate.
Orrrrr you can add mini chocolate chips in the mixture.
I’ve had them all three ways. The Verdict? Deliciousness all around!
So do whatever you heart desires 💕 Enjoy!
- • 1 cup (~10) medjool dates, pitted
- • ¾ cup gluten free oatmeal
- • 2 tablespoons cacao
- • 1 - 2 scoops chocolate protein powder
- • ½ teaspoon mint extract
- • 4 tablespoon Rebbl Cold Brew or Water
- • ⅓ cup mini chocolate chips (optional)
For Dipping: ½ cup chocolate chips + 1 tablespoon coconut oil
- Pit 1 cup medjool dates and place in food processor. Add ¾ cup gluten free oatmeal, 2 tablespoons cacao powder, 1 - 2 scoops chocolate protein powder and ½ teaspoon mint extract.
- Blend for 1 - 2 minutes, while slowly adding 4 tablespoon of Rebbl or water (1 tablespoon at a time), until you see ingredients combine.
- Turn off food processor and if desired, toss in ⅓ cup mini chocolate chips and stir until combined.
- Using a cookie scoop roll mixture into balls (about 12 - 16).
- And for even more chocolate goodness (if desired), heat ½ cup chocolate chips and 1 tablespoon coconut oil in microwave safe bowl and heat in 30 second intervals, stirring each time until completely melted.
- Place parchment paper on plate. Dip half the energy ball into the melted chocolate and place on plate.
- Once complete, put energy balls in freezer for 10 minutes. Enjoy
- Keep in air tight container in fridge.
