It’s not your traditional buffalo chicken sandwich, so get ready to use different ingredients to jazz up your day time meal.
If you haven’t been able to tell buffalo chicken is an afitcado favorite. I think this is my third buffalo recipe (easy buffalo chicken meatballs and healthy buffalo chicken wraps). It used to be my go-to in college because I thought it was “healthy” – yano, with no calories and all π ha!
Now I use it because it adds so much flava flav. Plus Nick is obsessed. Specifically with Frank’s buffalo sauce.
Lunches are always the hardest for me to plan. I have my 4 main go-tos (lettuce wraps, chicken salad, loaded sandwich and tuna stuffed avocado boat), but beyond that I don’t get very creative. Anything that’s easy and doesn’t require much effort for meal prep is what I stick to. Luckily this recipe fits in that description.
I tested a lot of different variations for this recipe, because I wanted to bring you guys something that was unique yet still tasty and I think I hit the jack pot!
I used one of the dressings Bolthouse Farms sent me and was stocked about the turnout. A little Organic Avocado Ranch Dressing with Franks Buffalo Sauce and just a touch of plain greek yogurt (optional based on desired thickness/creaminess). That’s it! Throw everything into a bowl, add shredded chicken and scoop it onto a perfectly toasted piece of (gf) bread.
I’m all about the open face sandwich. 1.) less carbs and calories 2.) have you had a piece of gluten free bread before? It’s not really something you want two pieces of… jk. My favorite brands are Canyon Bakehouse (7 Grain) and Udi’s (Whole Grain) and Glutinos (Multigrain). If anybody has tried a brand they love, let me know, I’m always on the look out for new goods to try!
I added spinach and cucumber on the sandwich and it was scrumdiddlyumptious. (hehe I like that word πππ)
But you could also add chopped celery, sprouts or radishes! Whatever your little heart desires. Want two pieces of bread? Go for it! I just think open-face sandwiches are fancy⦠until you try to eat them, of course, because they are messy as hell.
(I always tell my coworker not to look at my while I eat π)

- β’ 2 tablespoons Franks buffalo sauce
- β’ 2 tablespoons Bolthouse Farms Organic Avocado Ranch
- β’ 1 tablespoon plain Greek yogurt
- β’ 5 oz shredded chicken, boneless, skinless
- β’ 2 slice of gluten free bread
optional: hummus, spinach, cucumber, celery, radish, sprouts
- In a medium-sized bowl, mix together 2 tablespoons Franks buffalo sauce, 2 tablespoons Bolthouse Farms Organic Avocado Ranch and 1 tablespoon plain Greek yogurt.
- Add in the 5 oz of shredded chicken and stir until creamy smooth.
- Toast two pieces of gluten free bread, add your toppings as desired and top with buffalo chicken.
- Enjoy!
