Perfectly coated salmon with a touch of spice to impress your mama (or yourself)!

This is the perfect dish to make for your mom, your significant other or just yourself. Trust me, you’ll be glad you did. I’m semi obsessed with this dinner. Salmon is my go-to! Whenever we go out to eat, I get salmon. I used to buy the frozen shit to make at home, but quickly learned how much better good quality salmon is. It’s a reeealll treat. 😋
I saw and made a recipe for parmesan crusted pork chops and it was so delicious so I thought I’d modify and try it on my favorite dish! Viola Parmesan Crusted Salmon. The best part is that it’s simple. Like most my recipes. Seriously though, 5 minute prep and then in the oven it goes.
All you need is a parmesan, bread crumbs, paprika, parsley, garlic powder and salmon!
In a medium bowl, you’ll mix the coating together and rub both sides of the salmon, so it’s lightly coated.
Next, you transfer it to a pan on the stove with olive oil. ***WARNING: wear long sleeves. Olive oil likes to spit when heated and I promise you’ll get hit once or two. You’ll sear each side of the salmon, so that the outside get’s crusted – about 5 minutes total.
Then, you transfer the salmon to a baking sheet or pan and let ‘er cook for 20 minutes.
Just enough time to make a side dish! I like to serve it with a carb: long grain brown rice, quinoa, sweet potatoes or a regular spud, and a green veggie: asparagus, broccoli or a salad! This time, I took the pan that I fried the salmon in and used the leftover oil to sauté the asparagus. It was really flavorful and crispy! Just the way I like it.

- • 2 pieces Atlantic salmon
- • ¼ cup grated parmesan cheese
- • 2 tablespoon gluten free bread crumbs
- • ¼ teaspoon paprika
- • ½ teaspoon parsley
- • 1/2 teaspoon garlic powder
- • ¼ teaspoon salt
- • ¼ teaspoon pepper
- • 2 tablespoon olive oil
- Preheat oven to 350 degrees and spray pan.
- In a medium bowl, add ¼ cup grated parmesan cheese, 2 tablespoon gluten free bread crumbs, ¼ teaspoon paprika, ½ teaspoon parsley, ½ teaspoon garlic powder, ¼ teaspoon salt and ¼ teaspoon pepper. Mix together with fork.
- Place salmon in parmesan mixture, coating well.
- Drizzle 2 tablespoons olive oil in cast iron skillet on stove and place coated pieces of salmon in skillet.
- Brown each side of the salmon, about 5 minutes and then transfer to pan and place in oven.
- Bake for 20 minutes. Enjoy!
