A low fat, no sugar, super delicious dessert you’ll love!
Hey there beautifuls! 🙂 In one day this thing is going live! It’s kind of hard to believe that the day is almost here. I’ve pushed back the launch date a thousand times, but now whether it’s ready or not (which I’m sure I’ll find plenty of kinks) it’s time to share it with you all!
We’ll get to the ice cream here in a second, but first I wanted to tell you my hopes for this site.
I’ve have always been passionate about health and fitness, but in the past couple years, I started following many food/health/wellness bloggers that inspired me to change my lifestyle. I started eating healthier, I started trying new things, I started to be more creative in the kitchen, but most importantly, I’ve become to love my body for what it is.
That’s not to say that I don’t push myself in the gym or wish this was a little tighter and that was a little higher, but I’ve learned that with the right foods and the right attitude you can truly nourish your body and mind, and that’s the ultimate goal for this blog. I want to inspire, I want to get you to try new things, I want to push your body to limits you never thought it could go. And I want to do it together. I hope you follow along on this crazy journey!
Sooo onto the ice cream! You guys. I am obsessed with ice cream, particularly DQ Reese’s Peanut Butter Blizzard, but as you know that’s not really on this girl’s diet. (and when I say diet I mean lifestyle) Don’t get me wrong, Nick and I totally splurge some summer nights and go to DQ, but on the other 30 weekends out of the year that I want ice cream, I’ll be making some homemade peanut butter banana ice cream!
I saw so many recipes on Pinterest with the same idea, but I wanted to bring you my own version. Simple, clean, and super delicious!
There’s 4 ingredients and it’s all stuff you’ll probably already have in the house.
- Bananas (frozen)
- Peanut Butter
- Almond Milk
- Vanilla Extract
It’s so easy. Put the bananas and peanut butter in the food processor (or blender). Blend while slowly adding almond milk. Then add in the vanilla extract, blend again for good measure and that’s it!
If you like your ice cream creamy, then eat it right away. If you like it a bit harder, toss the ice cream into the freezer for an hour or so and then enjoy!
You can also add toppings like a drizzle of almond butter or a sprinkle of dark chocolate chips. I’m currently obsessed with Trader Joe’s mini milk chocolate peanut butter cups, so I’ll throw a couple of those on there. What are your favorite toppings?
- • 4 ripe bananas, frozen
- • ⅓ cup peanut butter
- • 2 teaspoons vanilla extract
- • ⅓ cup almond milk
- In a food processor or blender, add 4 frozen bananas and ⅓ cup peanut butter.
- Blend for 30 seconds, then add half of the ⅓ cup almond milk.
- Blend again for 30 seconds, then pour in rest of almond milk and 2 teaspoons of vanilla extract.
- Blend for 30 seconds, scoop into bowl and enjoy!
