Heyyoo! It’s almost Christmas. Ekkk! I’m a Christmas fanatic. I have Christmas music on 24/7 (Nick keeps asking if I’m sick of it yet) and I’m constantly thinking about what gifts I still need to buy (if you are too, check out my holiday gift guide post!) and what recipes I want to make and share. Ugh. I love it. 🙂
But this year is going to be a little different for me. My parents are actually going to New Jersey to spend Christmas with my brother and his new wife and her family, so we aren’t celebrating until they get back a week later.
And since I’m big on traditions, I’m trying to mentally prepare myself. It will be hard, but I’m excited to spend the time with my husband’s family (which let’s be honest, feels like my family at this point) and start our own traditions.
One that we are starting this year and one I’m really excited about is we are going to stuff each other’s stockings for us to open Christmas morning 🙂 just us two. I’ve already made a list of things I think Nick needs (aka new socks) hahah! But I’m also excited to surprise him with a few others.
It really is the most wonderful time of the year. ❄️
And it can get even better with these Peanut Butter Blossoms. I’m telling ya, they are life changing. Well, I mean maybe not life changing, but they are really delicious and it’s hard not to eat two (or more!)
I’m talking the perfect combination of peanut butter and chocolate. And yes, no refined sugar. Boyaa!
Peanut Butter Blossom Ingredients:
- All Natural Peanut Butter
- Coconut Sugar
- Egg
- Vanilla Extract
- Alter Eco Deep Dark Sea Salt Chocolate or Justin’s PB Cups (I’ve made it with both and love them equally, just depends how much peanut butter you can take 😋
I’ve made this recipe a couple times now and it’s seriously so easy, I could make them every week (but I won’t for my stomach’s sake.) You can make them small, bite-sized or larger, especially if you’re putting a mini Justin’s peanut butter cup in the middle!
They are soft and chewy and my favorite is to stick them in the microwave for 10 seconds or so to melt the chocolate a little. Ooooohh. I’m drooling just thinking about it.
How to Make Peanut Butter Blossoms
These are a no fuss kind of cookie.
Preheat the oven to 350 degrees and do NOT spray cooking oil on the pan.
In a large bowl, add 1 cup all-natural peanut butter, ¾ cup coconut sugar (I use full circle brand), 1 large egg, 1 teaspoon vanilla extract. Using a hand mixer, cream until it “doughs.” Then using a cookie scoop or a spoon, scoop out cookie dough and roll into 1” balls and place them about 2” apart on an ungreased cookie sheet.
Bake the cookies for about 12 minutes, depending on size. *Note: they may not look completely done, but the bottoms are probably brown and once you take them out of the oven they will continue cooking and set up. Wait a few minutes before placing chocolate on top of cookies. Press down gently and move to a cooling rack.
Enjoy warm with a cold glass of (almond) milk! 😉

- • 1 large egg
- • 1 teaspoon vanilla extract
- • 30 milk chocolate kisses > justin’s PB cups > Alter Eco dark chocolate (sea salt)
- Preheat oven to 350 degrees and do NOT spray cooking oil on the cookie sheet.
- In large bowl, add 1 cup all-natural peanut butter, ¾ cup coconut sugar, 1 large egg and 1 teaspoon vanilla extract. Using a hand mixer, cream until it “doughs.
- Using cookie scoop or spoon, scoop out cookie dough and roll into 1” balls and place them about 2” apart on ungreased cookie sheet.
- Bake cookies for about 12 minutes, depending on size.
- While cookies bake, break eco dark chocolate bar into small 0.5" pieces (I break one section into 4 pieces).
- Once cookies are done, let them set up on the cookie sheet for a few minutes, then place chocolate on top of cookies and press down gently. Move to a cooling rack.
- Enjoy!
