A simple, low carb egg bake perfect for meal prep!
Hey hey! There’s no denying egg bakes are the perfect go to meal for overnight guests or morning events. They are quick and easy but generally not on the healthier side, so today I’m sharing a lightened up version with you all! It’s very similar to my egg muffin recipe (almost exact) but I added a little more protein and switched out the veggies.
I’ve been to quite a few bridal showers lately where egg bakes have been at the top of the menu, which inspired this recipe. I’m not going to lie, it’s hard to compete with potato and cheese, but I think you’ll be pleasantly surprised with this one.
Like most of my recipes, this ones pretty versatile. Take out or add whatever ingredients you like best! For me it includes eggs and eggwhites as the base and then ground turkey (I use 93% lean, because there’s not much oil coming from the other ingredients), spinach, avo, mushrooms and feta (plus a little cheddar cheese sprinkled on top) 🙂
I tested the recipe the other week and it made 1 huge pan plus another little one. WARNING: use a little pan for best results 😏 (about 1 inch deep). Since we are substituting eggwhites for hash browns, the deeper the pan, the more spongy the taste and nobody likes spongy eggs! Also it’s best if eaten right away, I stored the bigger one in the freezer (for the photoshoot) and it reheated fine, but got watery. So there are my tips!
I love this recipe because 1. It’s a protein powerhouse (93% lean ground turkey, eggs, eggwhites AND cheese) and 2. It’s perfect for meal prep. Bake it up on Sunday and then take a piece or two for breakfast each morning! It couldn’t get any easier then that! I also love the fact that it keeps me full all morning long. If you know me, you know I eat every 2-3 hours and when I packed this goodie for breakfast, I skipped my mid-morning snack because this girl didn’t need it!

- • 6 eggs
- • 1 cup liquid eggwhites
- • ½ lb. ground turkey (93% lean)
- • ½ tablespoon olive oil
- • 4 oz baby bella mushrooms (crimini)
- • ¼ avocado
- • ½ white onion, diced
- • 3 oz light feta cheese
- • 1 cup spinach
- • ½ cup cheddar cheese
- • ¼ teaspoon salt
- • ¼ teaspoon pepper
- Preheat oven to 350 degrees and spay 1 inch deep baking dish.
- Heat ½ tablespoon olive oil on stove and ground ½ lb (93% lean) turkey.
- While turkey browns, whisk together 6 eggs and 1 cup liquid egg whites. Slice 4 oz baby bella mushrooms, ¼ avocado and dice ½ a white onion and toss in egg mixture.
- Pour in 3 oz light feta cheese, 1 cup spinach, ½ lb browned ground turkey and ¼ teaspoon salt and pepper. Stir until completely mixed.
- Place egg mixture in baking dish and put in oven for 45 minutes (or until done).
- Sprinkle on the cheddar cheese and place back in oven until cheese melts (about 5 minutes).
- Let cool and enjoy!
