Hello there! I hope everyone had a wonderful Thanksgiving. 🦃 I spent a lot of time with family, relaxing and eating. Now It’s time to get back on track before the next holiday hits. It’s so easy to just morph the bad eating from one holiday to the next and then you tell yourself that you’ll just start back up with the new year. I know because It’s a constant cycle for me. Weekends I indulge, week days I load up on veggies and sweat it out. And the same is true with holidays. You can find me eating pumpkin pie (GF of course) and mashed potatoes and then Monday hits and it’s carrots, broccoli and celery galore! #Balance.
One way to kick off the week strong but still feel like your treating yourself is with this amazing Pumpkin Pie Smoothie Bowl. I know you probably have ½ a can of pumpkin left after the holiday, because what recipe uses the whole can (of course not).
Did you know pumpkin puree is loaded with fiber and essential vitamins and minerals. Fiber helps you digest your food efficiently and thus helping absorb the foods nutrients. 1 cup of pumpkin puree is packed with 7 grams of dietary fiber (about 10% of your daily requirement)!! Pumpkin puree also is packed with iron – a mineral that helps fight sickness. Double whammy for the winter time.
Even though it’s most commonly used around the holidays, you should try incorporating it into your diet all year long. Luckily for you, you now have a recipe to do so!
Now for the good stuff! Grab these 5 ingredients (plus 2 spices) and get to blending!
- Pumpkin Puree
- Dates
- Almond Milk
- Greek Yogurt
- Frozen Banana
- Cinnamon
- Pumpkin Pie Spice
Throw everything into the blender and mix on high for about 1 minute or until smooth. Whenever I’m using a single serve cup, I shake it a couple times before blending again to make sure everything is combined. If you are using an actual blender, press the sides down with a spoon and blend again. This recipe makes for one, so if you’re meal prepping, double or quadruple and recipe and stick the rest in the fridge or freezer, which ever you prefer.
Once you have the base, feel free to add some toppings. My favorites are shredded coconut, granola (Purely Elizabeth is my favorite), chia seeds, hemp seeds and sliced banana, but do your thang!
- • ½ cup pumpkin puree
- • ½ cup vanilla greek yogurt
- • ½ frozen banana
- • ¼ cup almond milk
- • 1 date, pitted
- • ½ teaspoon cinnamon
- • ½ teaspoon pumpkin pie spice
Toppings: shredded coconut, granola, chia seeds, hemp seeds, sliced banana
- Throw everything into a blender (whether it's full sized or single serve cup), blend on high for about one minute.
- Shake or scoop sides down and blend again on high for about 15 - 30 seconds.
- Pour into bowl and add toppings as desired (or take it with you on the go).
- Enjoy!
