A simply sweet treat that’s baked to perfection and irresistibly good!!
Pull out those cast iron skillets because you’re not going to want to miss this recipe! We’re talking cinnamon spiced apples topped with a brown-sugared oatmeal crumble. This is the good stuff people!
You’re only seven ingredients, one pan and a little patience away from an oh so delicious dessert!
Well it doesn’t get much better than this. A big warm bowl of apple crisp topped with a scoop of ice cream. 🍎🍨

This recipe has taken the cake for one of my favorites this year! It’s soft, sweet, crumbly and crunchy all at the same time. And to say I’m obsessed would be an understatement.
There’s so many good things about it:
- Easy to make
- Uses ingredients that you likely already have in your pantry (so yes, you can make it tonight!!)
- “Healthier” – I used lower glycemic sugars (brown sugar and maple syrup) to help not spike insulin levels and gluten free (of, course)
- Versatile – great for any season or occasion
- It’s dessert, do I need to say more? 🤷🏻♀️
Here’s what you’ll need:
- Apples (I like pink lady)
- Coconut oil
- Pure Maple Syrup
- Cinnamon
- Almond Flour
- Oatmeal
- Brown Sugar
All pantry staples.
First, you’ll peel the apples – this is the worst part, but it goes fairly quick. Once the apples are peeled you’ll chop them into 1 inch pieces and toss them in the cast iron skillet. You’ll continue adding the rest of the “filling” ingredients – coconut oil, maple syrup, brown sugar, cinnamon – cooking the apples on the stove until they are soft (about 8 – 10 minutes).
While the apples are cooking, you’ll mix together all of the oatmeal crumble ingredients – coconut oil, almond flour, oatmeal and brown sugar. Once the apples are baked, you’ll top it with the crumble and place it in the oven at 375 degrees for 17 – 20 minutes. You can also broil it for the last couple minutes to make the top crispy, just make sure to watch and not let it burn.
I topped it off with my favorite Halo Top ice cream, Sea Salt Caramel. It’s the bomb!! (p.s. – I’m not a big fan of the dairy free kind, but to each their own.)
I’m telling you guys this apple crisp is heavenly. One thing I can guarantee is that you’re going to love this dessert. There are no words to describe the cinnamon-sugared sweetness. It’s just that good.
p.s. – I’ve made it 2 ways. First in a small single serve skillet about 3 ½ inches and then also in an 8” (what the recipe calls for). I just used about a fourth of the ingredients for the smaller one and it still tasted just as yummy! It’s foolproof. Go crazy!
- Filling
- 4 cups apples (peeled and cut into 1 inch pieces) - about 5 small apples
- 2 tablespoons coconut oil
- 2 tablespoons pure maple syrup
- 2 tablespoons brown sugar (organic if you have it)
- ½ teaspoon cinnamon
- Crisp
- 3 tablespoons coconut oil
- ½ cup almond flour (or gluten free flour)
- ½ cup oatmeal
- ¼ cup brown sugar
- ¼ teaspoon pink himalayan salt
- Preheat the oven at 375 degrees.
- Peel about 5 apples (~ 4 cups) and dice into 1 inch cubes. Place in cast iron skillet on top of stove. Add 2 tablespoons coconut oil, 2 tablespoons maple syrup, 2 tablespoons brown sugar, and ½ teaspoon cinnamon.
- Cooking the apple mixture on the stove for about 8 - 10 minutes or until they are soft, stirring occasionally.
- While the apples are cooking, mix together oatmeal crumble ingredients – 3 tablespoons coconut oil, ½ cup almond flour, ½ cup gluten free oatmeal, ¼ cup brown sugar and ¼ teaspoon pink Himalayan sea salt.
- Once apples filling is baked, add the oatmeal crumble on top, spreading evenly.
- Place the skillet in the oven and let bake for 17 - 20 minutes.
- *Broil it for the last couple minutes to make the top crispy, just make sure to watch and not let it burn.
