A lightened-up version of the delicious and classic Chicken Parmesan.
Hi all! This Chicken Parmesan is to die for! It’s light, yet filling and satisfies all your Italian dish desires! Plus it’s packed with protein and has nearly no carbs, making it the perfect weeknight entree.
I’m not going to lie, this is one of my favorite afitcado recipes!! It’s so simple to make, it’s healthy and there are only 5 ingredients (and a couple spices). Talk about easy peasy!
I was inspired by my go-to dish at Biaggi’s. Gluten Free Chicken Parm. Even Nick gets it, it’s that good. Baked chicken with a whole lotta sauce, cheese and noodles. Yum Yum 😋 I decided I’d take a stab at lightening it up and I think this one’s a winner. I can’t wait for you all to try!
As you all know, I moved back in the my parents a couple of weeks ago. It’s going fairly well and we’re finally getting in a routine. There’s pros and cons of course. Pros – 1. I love having cable/DVR again. and 2. I love having someone at the house that I can tell to start dinner, aka my dad. Cons – 1. the 20 minute drive to Ankeny pretty well sucks and 2. I’m missing my cute boy. 😝 I’ve been looking at houses everyday and the first thing I look for is a biiiiigggg kitchen. Ugh. I can’t wait!
With the move, came a search for a new photography spot. I’ve been scoping out the lighting in each room, and to be honest my parents house is pretty dark, so this weekend I took the shoot outside 📷 🌳 Just me, the food and a million bugs in 95 degree weather!
After I shot a couple recipes, we decided to have this one for dinner (my mom’s bday dinner) She loved it! My dad on the other hand took about a tablespoon of zucchini noodles, and then when I asked him if he liked them, he said “they taste too zucchini-y” 😂 – how can I get this guy to like vegetables?! 🤷🏽♀️
Both gave me a two thumbs up! 👍🏼👍🏼 (third pro about living at home is more recipe testers.)
So you ready for the dish? (Lol no pun intended 😏)
Here’s what you gotta do! Pound 3-4 chicken breast until tender. Throw them in a baking dish with marinara (homemade or store bought – I’m a Preggo girl and I used Fresh Mushroom). Throw on some spices and toss it in the oven for 30 minutes. Take it out and sprinkle on some cheese (mozzarella and parmesan). Toss it back in the oven for another 5 – 10 minutes until cheese is melted and chicken is thoroughly cooked. Broil for 5 minutes until tops are golden.
While the chicken bakes, whip up some zucchini noodles with your spiralizer (I use this one) and when you start to broil the chicken, throw the zoodles on the stove to heat em up (about 5 minutes.) Warning: Watch the zoodles carefully, don’t overcook them otherwise they will get soggy.
That’s it! Plate up and have yourself a healthy hearty meal!
- • 2 zucchini
- • 2-4 chicken breast, skinless and boneless
- • 4 cups marinara
- • ½ teaspoon Italian seasoning
- • ¼ teasoon crushed red pepper flakes
- • ¼ teaspoon oregano
- • ½ teaspoon garlic powder
- • ⅙ cup shredded mozzarella on each chicken breast
- • ⅛ cup shredded Parmesan on each chicken breast
- Preheat oven to 350 and spray medium sized baking dish.
- In baking dish, 2-4 place chicken breast, 4 cups marinara and ½ teaspoon Italian seasoning, ¼ teaspoon crushed red pepper flakes, ¼ teaspoon oregano, and ½ teaspoon garlic powder.
- Place dish in oven to bake for 30 minutes.
- Meanwhile, spiralize zucchini and set aside.
- After 30 minutes, take chicken out of oven and sprinkle about ⅙ cup of shredded mozzarella and ⅛ cup shredded Parmesan on each chicken breast.
- Place chicken back in oven for about 7 minutes - 10 minutes or until cheese is melted.
- While cooking chicken, cook zucchini on the stove, about 5 minutes or until slightly tender (try not to over cook). Place a serving on plates when done.
- When timer goes off, broil chicken until tops are browned (for about 3-5 minutes)
- Take chicken out of oven and place on bed of zuchhini. Spoon out marinara and enjoy!
