A hearty and savory breakfast dish to fuel your whole day!
Hi there 👋🏼 today’s post combines all of your favorite foods into one steamy, cheesy and delicious breakfast recipe. It has all my number one picks including sweet potatoes, chicken sausage, mushroom, eggs and cheese. Yuuuuummm! Talk about a protein power-house (with a little carb and fat on the side 😉)
I’m not a huge breakfast person, but ever since I made this one-skillet dish, it’s all I’ve been craving. The recipe makes at least 4 servings, so it’s the perfect meal to pack and take for breakfast!
Idk know why, but I feel like I’ve been running at 100 miles an hour lately. Work has been hectic, it’s one of those months that you think you’ve got everything under control on Monday, but then shit hits the fan by Tuesday. 🙃
I’ve found myself not wanting to write blog posts at night because I’m just drained from the day. The thought of looking at a computer screen for another second makes me want to just go to bed. Lol but for real, have you ever thought of how much screen time your eyes get every day? The only time I’m not looking at screen is when I’m working out and even then I’m on my phone picking 90s hip hop jams 🎧 🎶
It’s been bothering me how much I’m on a computer or phone, so I’ve decided to try a few things:
1. Cut back on social media. I find myself mindless scrolling through Facebook and Instagram when I could be living more in the moment. For lent a couple years ago, I gave up social media and it was the best thing ever. Except I missed a lot of people’s birthdays (sorry, Haley 🙂) And as much as I would love to do that now, I can’t, because I got this blog to run!!
2. Writing daily gratitudes. I just got a new notebook to document all my thoughts in before bed. (Who else loooooves getting new notebooks 🙋🏽). On one of my favorite podcasts – The Balanced Blonde’s Soul on Fire Podcast – I’ve heard a lot of people say 1. Meditation, 2. Journaling and 3. Daily Devotions/Gratitudes are three things that really help them throughout the day. So, I thought I’d give it a try!
Does anybody else do those things? If so, what are your tips to sticking to it?
Annnwayyy onto the recipe!! So a couple of weekends ago I was planning on testing a sweet potato egg muffin recipe (like using a muffin tin and putting sweet potato hash browns on the bottom with cheese and then cracking an egg on top and baking it), but I’ve never done that before and truth be told I didn’t have time to test the recipe that week, so Saturday rolled around and I had “scheduled” time to shoot this recipe. It’s 1p and I’m standing in the kitchen talking to my mom about it and about 5 minutes into our conversation, I decide that I’m too tired/lazy to shred sweet potatoes.
Like seriously. 😂
So instead, I chose to make this recipe. (I don’t know why I thought cubing sweet potato would be any easier than shredding, but I did.)
This recipes is pretty fool proof. Here’s what you gotta do: cube sweet potatoes and throw them in the cast iron skill to fry. You want to do this first because they take the longest to cook. *Tip: you can put a lid on the skillet to help steam/soften the sweet potatoes once they are crispy.
Then you’ll chop the mushrooms (I buy pre-sliced), chicken sausage (I use al fresco’s), yellow onion and green onion. Next, you’ll whisk the eggs and set everything a side. You’ll let the sweet potatoes cook for at least 10 minutes by themselves. Just make sure they are done before you add the other ingredients because everything else cooks fast.
When the sweet potatoes are ready, throw in the mushrooms, chicken sausage, and yellow onion. Let it cook for about 3 – 5 minutes and then you’ll whisk in the eggs. Making sure to stir frequently. Last, you sprinkle on a handful of cheese and then you dive in! Super simple.
I topped mine with a little green onion, avocado and red pepper flakes, but you could also do plain greek yogurt, salsa, sriracha, etc. Whatever floats your boat!
It’s the perfect dish for brunch or meal prep and it saves well in the fridge. I had mine for up to a week and it reheated great! The best part is you can substitute whatever ingredients your little heart desires. Potatoes, bacon, regular sausage, goat cheese, eggwhites, you name it. It’s all num num num 😋
- • 1 large sweet potato, cubed
- • 1 tablespoon olive oil
- • 1 cup mushrooms, sliced
- • ½ yellow onion, finely diced
- • 1 package of chicken sausage, cut into 1 inch rounds
- • 6 eggs
- • ¼ - ½ cup cheddar cheese
- • ½ teaspoon salt and pepper
optional: green onion, avocado, red pepper flakes, plain greek yogurt, salsa, etc.
- Pour 1 tablespoon olive oil on cast iron skillet and set on stove.
- Cube 1 large sweet potato and throw in cast iron skillet. Turn on medium-high heat and let fry for at least 10 minutes, stirring occasionally.
- While sweet potatoes cook, chop the 1 cup mushrooms, ½ of a yellow onion, 1 chicken sausage and green onion (if desired). Next, whisk 6 eggs and set aside.
- Once sweet potatoes are ready, throw in the mushrooms, chicken sausage and yellow onion. Let cook for about 3 - 5 minutes.
- Then whisk in the 6 eggs. Stir frequently.
- Turn heat off and sprinkle ¼ - ½ cup cheddar cheese.
- Add toppings and enjoy!
