A hearty soup, loaded with protein and easily made in the crockpot.
Hi there! Whaddup? I’m totally getting spring fever. I want to take every day off of work and just play outside! I just bought the cutest little kitchen planting box to grow some herbs. I don’t know which ones yet, but I’m soooo excited. Probably oregano and basil. Hopefully I don’t kill them. Last year when I moved into my townhome, I was so excited to plant flowers (in a pot) and I ended up buying perennials. I didn’t know there was a difference between ground and potted plants. Needless to say, those suckers turned black and died in a month. This year, I’m doing some research and making sure I keep them alive.
I love all the flowers that have budded and all the green grass. It is well worth the rain we’ve had. I’ve been waking up early and taking Mo (my doggie) on a long walk in the morning. The sun’s shining, the grass is wet and it’s just beautiful! Glory be to God 🙏🏼
Anywhooo, this recipe does not go well with the beautiful weather, but I shot it a while back and am just now posting. Whoops! Oh well, there’s no rule that you can’t have soup in spring! I actually kind of dig it cold. 🙈 Plus it’s sooo easy to make, I whip up a batch and then put half in the freezer for when I’m out of food and need something for dinner.
I grew up on chili, but when I cut back on red meat, it was something I stayed away from. But there’s no need to do that anymore. I substituted beef for lean ground turkey and it tastes just as good. I also throw in sweet potatoes, crushed tomatoes, tomato sauce, kidney beans, black beans, jalapeños and some spices.
The typical chili recipe turned a tad healthier.
I mentioned before that I have soup a lot for lunch because it’s such an easy meal prep. Still true here. You just fry the ground turkey and set it aside and then throw the rest of the ingredients in the crockpot and let it cook for 3-6 hours. Toss in the ground turkey, give it a stir and just like that you got yourself about 6 servings of soup!
I throw on some shredded cheddar cheese, more jalapeños, greek yogurt, maybe even some tortilla chips to help tone down the spice. (fun fact: my dad puts sliced American cheese in his chili 😝 what’s your go to toppings?
- • 1 lb. 93% - 99% lean ground turkey
- • 2 medium sweet potatoes, cubed
- • 1 28 oz can diced tomatoes
- • 1 can tomato paste
- • 1 15 oz can black beans
- • 1 15 oz can kidney beans
- • 3 heaping tablespoons jalapeños
- • 1 teaspoon cumin
- • 1 teaspoon chili powder
- • 1 tablespoon garlic, minced
- Turn stove on medium heat and add ground turkey to frying pan. Cook until browned. Set aside.
- Turn crockpot on high and toss in 2 cubed medium sweet potatoes, 1 can diced tomatoes, 1 can tomato paste, 1 can black beans, 1 can kidney beans, 3 heaping tablespoons jalapenos, 1 teaspoon cumin, 1 teaspoon chili powder and 1 tablespoon minced garlic.
- Stir and cover for 3 hours (if turned to low, let cook for at least 6 hours.) Enjoy!
