A healthy lunch option for any occasion!
Hey there my peeps! Im currently laying on the beaches of Mexico, enjoying every last minute of relaxation! This is thee life. Last night, Nick asked me if I would rather lay on the beach for the rest of my life or go back to the grind, which I would choose. Easy. BEACH. Nothing is better than this.
As I’m laying here, I’m thinking about summer. Only three short months away. When I get back I know I’ll miss the sun and beach. What I really love about summer though are the fresh veggies and fruits. Don’t get me wrong, I enjoy a nice hearty meal (and my body craves it, especially in the winter), but I really like hard boiled egg and veggies with hummus and cottage cheese and watermelon. 😋 Those things just don’t sound as good to me in the winter. Do you feel the same?
While I sit here dreaming about summer, I thought this would be the perfect recipe to share.
I used to have chicken salad all the time growing up. It was one of our go to Saturday lunches. My mom was bomb at making a mean chicken salad. Back then no one thought twice about using a cup of mayonnaise. Now-days I try and use as little as possible. I’ve been meaning to try some vegan or health market kinds, but haven’t yet. Recommendations welcome!
For the longest time I couldn’t muster up to using plain Greek yogurt. I didn’t want to ruin the food, but once I did, I wish I would’ve tried it sooner. It doesn’t have a weird taste and its a healthier alternative. My only warning is to not expect it to be creamy – it’s thinner than regular mayo. If anyone has any suggestions for Greek yogurt they like to use, let me know!
I love this recipe because it has the perfect combination of protein and carbs. Plus I love that the apples add a little extra crunch, like a chip! Okay I’m drooling over here just thinking about it. It’s a sweet and salty perfection!
Other ingredients you could add:
- Walnuts instead of almonds
- Grapes instead of dried cranberries
- Celery instead of green onion

- • 1 5 oz chicken breast shredded or cut into 1 inch cubes
- • 1 tablespoon olive oil mayo or plain greek yogurt
- • 2 tablespoons silvered almonds
- • ⅛ cup dried cranberries
- • 6-10 grapes, sliced
- • 1 tablespoon green onion
- • 1/4 teaspoon salt
- • 1/4 teaspoon pepper
- • 1 honey crisp apple, sliced
- In a medium bowl mix together 1 5 oz chicken breast shredded or cut into 1 inch cubes, 1 tablespoon olive oil mayo or plain greek yogurt, 2 tablespoons silvered almond, ⅛ cup dried cranberries, 6-10 sliced grapes, 1 tablespoon diced green onion,1/4 teaspoon salt and ¼ teaspoon pepper.
- Core an apple and cut apples slices horizontally about ¼ inch thick (should yield 5-6 slices).
- Place chicken salad on apple slices.
- Enjoy!
